i think you don't need to worry about making a conscious effort to categorize people by gender given you're already one of the people in the "this person represents all women and isn't capable of logic so why reason with her" camp based on some of your posts
Also if you're planning to break up with her over this, give yourself a couple of days to really decide it. It kinda sounds like you're really upset at her and she's really upset at something so you guys are probably both somewhat irrational right now. If in a couple of days you still feel the same way then yea talk to her about it

Give her some space, people think irrationally when they're upset. I just recently started playing Ultimate and I don't like it whenever the more experienced guys will compliment me on like every little thing because I feel like it's a very sympathetic "Good Job" and it can come across as condescending. Your girlfriend might be having similar thoughts, she might think you're not being real and just feeling sorry for her, which isn't rational on her part but people don't always have to be rational. If she asks for space, give her space, she'll come around
