i shít you not there was this kid named kareem that literally always fûcking brought rice cakes, i was pissed but a few of my class mates were even more outraged, they apparently took him to the back during recess and took turns kicking him in the nuts. Safe to say he never brought rice cakes to potlucks ever again

Right except it is because the actual name of the Aztecs is the Mexica, Aztec only refers to the empire. So a member of the Mexica tribe would be a Mexican. Don't make me school you, son.
Tex Mex and cheap Mexican food are entirely different things. Tex Mex foods are developed after Texas/ New Mexico become part of the USA. They are not Mexican.
By that logic you might as well say all Mexican food that isn't Tex Mex is Spanish food; given how brief the independence whilst controlling Texas & New Mexico was.
Wrong. Mexican food has indigenous origins. Most of the corn based with rice and beans is genuine Mexican food. Stuff like Nachos/Quesadilla whatever are Tex Mex. Mexico didn't even have dairy until the 1400s.
In that case it's not Mexican at all! Cultural Appropriation! Terrible.
