i remember praising the anime to my brother who got me to watch it because they did everything amazingly, opposite of every other long running anime. no filler, fights don't take 5 years to complete, no boring side stories to fill time, etc. and then when that chimera ant arc came, they did suddenly did all of it, and i was pissed. still, the anime is great.
just finished The Third - The Girl with the Blue Eye
the plot is flimsy and the dialogue is hit or miss, but the characters are very enjoyable and the music/sound is solid. artwork is okay, bordering subpar. the story has major gaps...
but despite all that, the overall theme is enjoyable and i have to say i ended up liking it.
7/10, not without its faults, but worth a watch if you're bored and have nothing else to watch. feelsgoodman

Does anyone know a good anime that can't be boiled down to the following?
1) Dull boy meets kewl girl(s) 2) Average guy gets kewl powers
Well, the only slice-of-life show I know other than Nichijou is Yuru Yuri, which certainly doesn't follow that pattern (because it's slice-of-life). There are plenty of anime that are similarly distant from that particular formula -- i.e. shoujos, slice-of-life, and anything with 0 supernatural elements that isn't a harem -- so I'm assuming you're asking for something that is close but still subverts it.
The first things that occurred to me were Code Geass and Death Note, both of which feature MCs that are unique characters before they gain their powers, but you've probably already heard of those. There's Assassin Classroom, if you haven't heard of that, although I guess that protagonist's somewhat average as well.
Idk I've been watching fewer action shows lately. :( Humanity Has Declined is a really unique one I liked a lot.
This might be easier if you could give more parameters for what sort of shows you like/are looking for.
Thank for the response! I'm haven't really given much parameters because I'm not really sure what I'm looking for myself, as long as the protags aren't too characterwise 2-D. I'll be sure to check them out.

Watch Nichijou for slice of life. As slice of life, that has ridiculous animation quality, and I didn't feel like my brain was sliced up after watching it.
