welcome. i like to cook and eat so i will be documenting my food adventures. this will basically be a food blog where i will talk about foods i have made (incl. recipes) or yummy foods i have eaten. i'm gonna try to make this a daily thing but sometimes i recycle recipes so who knows...
just a disclaimer: i'm a pescatarian and at the moment i am on a low carb diet so i can lose weight, so if some of these recipes seem like extremely healthy that's why. i am a big fan of greasy, carb loaded foods but i'm tired of being fat and ugly. of course i'll probably have the occasional cheat day where maybe my boyfriend and i go somewhere fun so we eat something unhealthy or not in my diet but for now i'm gonna try to produce low carb recipes and stuffs.
shrimp is one of my fav foods... it's so yummy and i have SO MUCH shrimp in my freezer :3c
ok ladies for lunch today i made pizza ! but i used almond flour instead of regular flour so it's like 1/2 the carbs pretty much. i only ate half of the pizza too so in total i think it was like... 10 carbs? maybe? who knows.
so i put 2 cups almond flour, 2 eggs, sea salt, and melted unsalted butter into a pan and mixed it up until it became kinda hard then i kneaded the dough with my hands for like 2 mins. after that i flattened the dough and made sure it was circular then rolled up the edges to make the crust thicc. then i threw that bad boy in the oven (preheated to 425 degrees) for 10 mins. once it was done i took it out and added my toppings. u can add whatever toppings u want so i won't give u instructions on how to do that...
hi ladies, just finished eating my dinner so now i’m going to blog about it. tonight we ate shrimp cauliflower fried rice with sweet and sour pork. so i put cauliflower rice, corn, carrots, and green onions in a pan and sautee’d them in sesame oil and butter. for spices i added salt, pepper, and sesame seeds. once all the veggies were cooked i transferred them to a bowl and used the same pan to sautee the imitation crab and shrimp in sesame oil and butter & seasoned with salt and pepper. once everything was all done i mixed up the bowl and set it aside. then i cooked the gardein pork bites according to the instructions and threw the pork over my fried rice and added the sauce on top. pretty simple meal, only hard part was removing the shells from the shrimp
ok ladies today i made chili lime baked fish w/ avocado cilantro sauce and cilantro lime cauliflower rice. so i grabbed some fish fillets and cut them into fish strips cause idk i like strips. i put chili powder, cayenne pepper powder, cumin, lime juice, salt & pepper, and olive oil into a bowl and mixed it all up then put my fish strips in there to coat them and moved them to parchment paper where i would then put them in the oven (preheated to 475, cooked for 10 mins). made my cauliflower rice by grinding cauliflower to small bits and sauteeing the cauliflower in a pan with butter, cilantro, and lime juice. i covered the pan to let the rice steam so it can bcome soft. after all that i took an avocado, plain yogurt, cilantro, salt and pepper and blended it all together to make a creamy sauce. then everything was done and i plated my foods and ate it. was yummy, 10/10 would recommend
so i was blending the avocado with the other ingredients but i wasn't getting quite the consistency i wanted, maybe because the avocado wasn't ripe enough
