Any attempt to classify Italians or Spaniards as non-white seems so Americanocentric to me, as here in Europe most people agree that they are white. As far as I know, the only reason Italian Americans do not want to identify as white is because they are often perceived as Hispanic and suffer racism for it. When you are treated negatively for your skin color then surely it makes sense to own it and say "well if you don't see me as white, I don't either. Italian and proud!", but this doesn't mean they can define the way the world sees actual Italians, as people who didn't grow up in their home country are, whether they deny it or not, disenfranchised from their homeland population and perceive the world, race etc. differently than people back home.
What I'm saying is, race/ethnicity relations are different in different countries and continents and it is both futile and ignorant to attempt to come up with a single approach to seeing race. Maybe when Italians do not receive racism in America (or all "true Europeans" in Europe gang up on Italians) the situation in the two continents will be more similar and we'll be able to come up with a more unanimous answer.

P.S. I only talked about these two continents because I don't know about the struggles (or lack thereof) that Italians face in other continents, though I'm sure that they aren't focused on the European vs. non-European aspect but the foreigner vs. local one (and even if they are in some countries, like Japan, I really don't think the Japanese have a say in this).
