it's kind of one of those "only as strong as weakest link" principles. when you're part of the town you're in the majority, thus you have more people on your side and it's more likely for the weak link at the table to be aligned with you.
when you flip mafia the chance of being stuck with the short straw is smaller because there aren't as many mafia members (you can also look at it from the other perspective which is that the weak link is more likely to be town), so you have an easier time winning
