Get yourself a japanese railpass if you want to see the whole of japan. Also look up festivals, almost every town in japan have their own, and attending these were the best part of my trip there. Tokyo with a 3rd of Japan´s population has a multitude of things to do, but it is also the city most used to tourist and you will not be received with the same level of local curiosity as for instance when travelling Hokkaido. Japan is a food mecca and you should try tonkatsu ramen and hiroshima okonomiyaki if you get the option to do it. Don't forget you can go see the japanese fish market in tokyo, which is one of if not the largest in the world. I could go on, but feel free to pm me if you have any questions :)
As in the locals still approach tourists with similar curiosity in a place as cosmopolitan as Tokyo as they would in more remote places?

I'm going to be booking Tokyo soon, doing research on a neighborhood that I want to stay in. Ideally, I want to be away from where tourists normally venture - i want to see 'real' Tokyo.

i went to tokyo last year and a few places of note are definitely
-kozue at park hyatt
-hachibe
-sushi kanesaka (note that this is a 2x michelin star joint but it's absolutely worth the money. possibly best suited for lunches if you're going alone)

Visit the Osaka Castle if you're interested in stuff like that. It's quite interesting.
