Jew is not a derogatory word. It is standard English. Jap is an ethnic slur. Pluralizing Jew to Jews does not change its meaning. However, like similar terms that pertain to the name of a given group, it does depend on context. The LGBT discourages the use of the word 'homosexual' and suggests 'gay'. the next time you see your jewish friend, say "hey you jew" and you let me know how that goes. it is demeaning specifically because it narrows down the person to their ethnicity/race/religious background.
it's the same thing as calling a muslim an "arab". sure, it's not derogatory on its own, but it's almost always implying the distinction between them being just a "person" or other identifying noun and them being one of 'those' ethnic groups
